Indian Gravies & Pilafs

4 Hrs

Welcome to Irene's Culinary Studio (ICS), where I, Irene, take you on a flavorful journey through the heart of Indian cuisine, focusing on rich gravies and aromatic pilafs. Drawing from my roots and passion for cooking, I specialize in teaching the art of creating authentic dishes that tantalize the taste buds and warm the soul.

In our studio, you'll master the art of Hyderabadi Chicken Korma, a dish steeped in the royal flavors of Hyderabad. Originating from the kitchens of the Nizams, this creamy delicacy combines tender chicken with a blend of spices, nuts, and yogurt, creating a dish fit for royalty.

Next on the menu is Chicken Dopiaza, a dish with origins dating back to the Mughal era. 'Dopiaza' translates to 'two onions', and true to its name, this dish features onions in two forms – caramelized and added as a garnish, enhancing the rich flavor profile of the tender chicken cooked in a fragrant sauce.

For our vegetarian enthusiasts, we delve into Paneer Achari, a tantalizing dish that marries the tangy flavors of pickling spices with the creamy goodness of paneer. Each bite is a burst of flavors, transporting you to the streets of India where the aroma of spices fills the air.

No Indian feast is complete without a fragrant pulao, and at ICS, we explore the coastal flavors of Goan Pulao. This fragrant rice dish is elevated with the addition of fragrant spice and hint of sweetness from caramelized onions, this pulao is a celebration of Goan cuisine's rich heritage and vibrant flavors.

Venturing further into vegetarian delights, we uncover the earthy goodness of Mushroom Pepper Fry, a South Indian specialty bursting with the aroma of freshly ground peppercorns and sautéed mushrooms. Simple yet robust, this dish is a testament to the beauty of South Indian cuisine.

Lastly, we savor the subtle yet satisfying flavors of Corn Methi Pilaf, where sweet corn kernels mingle with fragrant fenugreek leaves, creating a harmonious blend of textures and tastes. This dish exemplifies the versatility of Indian cuisine, marrying local ingredients with traditional techniques.

Each dish we explore at ICS is not just a recipe but a story—a story of culture, history, and passion woven into every ingredient and every technique. Join me on this culinary adventure as we unlock the secrets of Indian gravies and pilafs, one flavorful dish at a time.
